4.1. Coconut pre-treating technique
From the dehusking process, the coconut will be processed through shelling, paring, washing, and quality checking, to get the pieces of coconut meat.
4.2 Coconut grinding and coconut milk extracting and filtering technique
Using the two stages coconut milk extracting technology, by increasing the output of coconut milk, and also full use of the material, the extracting rate can reach up to 65-70%.
4.3 Mixing and flavoring improving technique ( refer to the note in the flow chart)
Manufacture can choose one kind of product in a line or more than one kind by using the following process.
a. For sugar free pure taste coconut milk powder: coconut milk from collecting tank, after filtering, it will be then transferred to evaporating stage by pump, without separate the cream/fat.
b. For whole fat sweet powder: coconut milk from collecting tank, be transferred to PHE by pump after measure. Heating to 45-60 ºC and be feed to mixing tank. Dissolving sugar and feed to sugar tank. Sugar syrup mixing with milk in mixing tank, and be feed to evaporating stage.
c. whole fat formula powder: Milk from storage tank, be transferred to PHE by pump after measure. Heating to 45-60 ºC and be feed to mixing tank. Dissolving additive(some nutritional ingredient) and feed to temporary tank. mixing with milk in tank, after homogenizer in 15Mpa pressure be feed to evaporating stage.
4.4 Evaporating technique
Transfer milk(12%) to be sent to balance tank of evaporator, heated and transferred to 2 stage effective heating room , The sterilizing temperature is 86~94ºC, keeping time for 24 seconds, then go to first effective evaporate room (temperature is 68-70ºC) , transferred by pump to second effective room( temperature is 46-50ºC). The consistency could be 45%.
4.5 Spray drying technique
Condensed coconut milk(45%) be transferred by high pressure pump to drying tower. The coconut milk be sprayed to mist state and meet the hot wind(160~170ºC), become to powder quickly and flow down to cone bottom of the tower, then go to flow bed dryer and mixing with lecithin(1%, optional), the small powder will be dried to 98% in this fluid bed, and sent to sieving and be cooled down to 30~35ºC and collected into powder tank.
4.6 packing technique
The coconut milk powder be feeded to packing machine by air, after packing in bags and transferred by conveyer to storage room. Form milk to powder
4. 7 CIP cleaning system
CIP is controlled by PLC, the liquid level, temperature, acidity is monitored.
All equipment , piping, valves could by cleaned by CIP.
The evaporator can be cleaned by its own system.
Drying Tower cleaned by pressure pump and warm water.
